Dinner by Chloe Charles and Fulgarnces, l’Adresse
Dinner will be produced in collaboration with Fulgarances, l’Adresse, an incubator for young culinary talent. Chloe Charles, their first resident chef, will be preparing dinner. Chloe has worked with François Pasteau (L'epi Dupin, first eco-responsible restaurant in Paris), Pascal Barbot (The Astrance), David Toutain (Agape Substance) and was sous chef to Bertrand Grébaut (Septime) for several years before setting out on her own. Chloe is committed to sustainability and making great food accessible to everyone.

Wine by Selection Massale
Wines will be provided by Selection Massale, whose goal is to “represent the most exciting, precise, well-made natural wines available from small wineries.” The vignerons they represent work the land organically for the most part, biodynamically for some.  All of their wines are fermented naturally and made without “cellar trickery or makeup.”  They favor clean, highly drinkable wines.  They want our wines to be the first bottles emptied at the dinner table, but the longest remembered.
